- ¾ cup milk
- 1 slice white bread

- Soak the bread: Cut the crusts off the white bread and place it in a bowl with the milk. Let it soak for just a few seconds, allowing the bread to absorb the creamy liquid.
- Combine ingredients: In a food processor, add the walnuts, garlic, Parmesan, and olive oil. Then, throw in the soaked bread along with the milk to create a deliciously smooth blend.
- Blitz together: Process all ingredients until the mixture is thick but smooth. If the sauce seems too thick, gradually add a little more milk and blend until you reach your desired consistency.
- Save pasta water: If you’re planning to toss this glorious Walnut Sauce with pasta or gnocchi, be sure to reserve 1 cup (240ml) of the starchy pasta water; it helps bring everything together beautifully.
- Mix with pasta: Once you’ve drained your pasta, add it back to the pot and stir in the Walnut Sauce. Use the reserved pasta water to loosen the sauce as needed, ensuring a perfect coat on every noodle.
- Garnish and serve: For an extra touch, serve your dish with additional chopped walnuts sprinkled on top, offering a delightful crunch and presentation!
