- 2 cups shredded Pepper Jack cheese
- 1 cup shredded sharp cheddar cheese
- 2 to 3 fresh jalapeños, finely diced, seeds removed
- 2 tablespoons cream cheese, softened
- ½ teaspoon garlic powder
- ¼ teaspoon salt
- 1 cup all-purpose flour
- 2 large eggs
- 2 tablespoons milk
- 1½ cups breadcrumbs or panko
- ½ teaspoon paprika
- ½ teaspoon black pepper
- Vegetable oil or canola oil, as needed
- Ranch dressing
- Spicy mayo
- Creamy Cajun sauce
Instructions
- In a large bowl, combine Pepper Jack cheese, cheddar cheese, diced jalapeños, cream cheese, garlic powder, and salt. Mix until evenly combined.
- Using a small scoop or spoon, form the cheese mixture into bite-sized balls. Place them on a parchment-lined baking sheet. Freeze for at least 30 to 45 minutes.
- Prepare three shallow bowls. Place flour in the first bowl. In the second bowl, whisk eggs with milk. In the third bowl, combine breadcrumbs, paprika, and black pepper.
- Remove cheese balls from the freezer. Roll each one in flour, then dip into the egg mixture, and finally coat with breadcrumbs.
- Heat oil to 175°C (350°F). Fry the bites in small batches for 2 to 3 minutes until golden brown and crispy. Remove and drain on paper towels.
- Serve hot with your favorite dipping sauce.
Notes
- Freezing the cheese balls is essential to prevent melting.
- Adjust jalapeño quantity for desired spice level.
