Description

Tamago Sando is a popular Japanese egg salad sandwich made with a rich and creamy filling, served in soft, fluffy brioche buns or Japanese milk bread. It’s perfect for a snack or a light meal, offering a simple yet satisfying taste.

  • 6 mini brioche buns
  • 6 large eggs
  • 1/3 cup Japanese mayonnaise
  • 1/4 teaspoon salt
  • 1/2 teaspoon white granulated sugar
  • 1/8 teaspoon black pepper
  • 1 teaspoon dried parsley (optional)
  • 1 tablespoon white vinegar (for boiling eggs, optional)
  • 1/2 teaspoon salt (for boiling eggs, optional)

Instructions

  1. Boil eggs: Bring water to a boil in a medium pot. Add optional salt and vinegar for easier peeling. Lower eggs into boiling water and cook for 13 minutes.
  2. Chill eggs: Remove eggs and transfer them to an ice bath to cool.
  3. Peel eggs: Once cool, crack and peel the eggs. Use a spoon to help peel and separate yolks from whites.
  4. Prepare egg mixture: Grate the egg yolks into a mixing bowl. Dice the egg whites and add them to the bowl with the yolks.
  5. Make egg salad: Add Japanese mayonnaise, salt, black pepper, and sugar to the eggs. Mix until creamy and well-combined to create the tamago sando filling.
  6. Assemble sandwich: Cut the brioche buns halfway. Scoop an equal portion of the egg salad into each bun. Close the buns.
  7. Garnish and serve: Garnish with optional dried parsley. Enjoy your tamago sando immediately.
