  • 1 cup parmigiano reggiano, freshly grated
  • 0.25 tsp Worcestershire sauce
  • 0.25 tsp freshly cracked black pepper
  • Kosher salt
  • 3 tbsp crushed Calabrian chilis from a jar
  • 1 tbsp water
  • 2 chicken breasts
  • ⅓ cup all-purpose flour
  • 0.5 tsp garlic powder
  • 0.5 tsp kosher salt
  • 0.25 tsp black pepper
  • 2 large eggs, beaten
  • ¾ cup panko breadcrumbs

Instructions

  1. Create the Paste: Place anchovies, garlic, and a pinch of salt on a cutting board and finely chop until a paste forms. Transfer to a bowl, add 1 tsp lemon juice, and set aside for five minutes.
  2. Whisk the Dressing: Add egg yolk, lemon zest, juice of ½ lemon, dijon mustard, and a pinch of salt. Whisk until smooth and creamy.
  3. Emulsify and Season: Slowly add Drizzle while whisking until emulsified. Whisk in parmigiano, black pepper, Worcestershire sauce, and Calabrian chilis. Adjust seasoning with salt and pepper. Add 1.5 tbsp water to thin.
  4. Prepare the Chicken: Place chicken breasts between parchment paper and pound until ½ inch thick. Season both sides with salt, black pepper, and garlic powder.
  5. Coat the Chicken: Dredge the seasoned chicken in flour, then in beaten egg, followed by panko breadcrumbs.
  6. Fry the Schnitzel: Heat oil in a large frying pan about ½-inch deep. Cook coated chicken for 3 minutes on each side until golden brown. Transfer to a wire rack and sprinkle with flaky salt.
