Description

Potato cheese sticks are a delicious appetizer with a crispy outside and gooey, cheesy middle. They are made with seasoned potato dough, filled with cheddar cheese, and coated in crunchy panko breadcrumbs before being fried to a golden brown.


Ingredients

  • 3 russet potatoes, cooked and cubed
  • 1/4 cup bacon, diced
  • 1/4 cup green onion, diced
  • 1/2 cup sour cream
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 block cheddar cheese, cut into strips
  • 2/3 cup cornstarch
  • 100g panko breadcrumbs
  • 1/4 cup flour
  • 1 egg, beaten
  • Vegetable oil or canola oil, for deep frying
  • Chopped parsley, for garnish (optional)

Instructions

  1. Prepare the potato dough: In a large bowl, combine cooked, cubed potatoes, diced bacon, green onions, sour cream, salt, and pepper. Mash until mostly smooth, leaving some chunks for texture.
  2. Prepare the cheese: Cut cheddar cheese into strips about 1/4 inch thick.
  3. Form the potato balls: Take a spoonful of the potato mixture and flatten it in your palm. Place a cheese strip in the center and wrap the potato mixture around it, forming a ball. Repeat until all the mixture is used.
  4. Coat the sticks: Set up three bowls: one with flour, one with beaten egg, and one with a mixture of cornstarch and panko breadcrumbs. Roll each potato ball in flour, dip in the egg, and coat with the panko mixture.
  5. Fry the sticks: Heat vegetable oil in a deep fryer or pot to 350°F (180°C). Carefully place the coated potato sticks into the hot oil and fry for about 3 minutes, or until golden brown and crispy.
  6. Drain and season: Remove the sticks from the oil and drain on paper towels. Sprinkle with a little salt while they’re still hot.
  7. Serve: Optionally, garnish with chopped parsley and serve immediately.

Notes

  • For a firmer dough texture, use cold mashed potatoes.
  • Refrigerate the stuffed potato cheese sticks for about 30 minutes before frying to prevent them from falling apart.
  • Customize fillings by adding sautéed mushrooms, jalapeños, or ground meat.
  • For a healthier option, bake at 400°F (200°C) for about 15 minutes until golden brown.
