Ingredients

  • Juice of 1 1/2 limes plus zest from 1 lime
  • 1 cup cherries, halved and pitted
  • Salt, to taste
  • 1 large handful of fresh cilantro, finely chopped
  • 2 garlic cloves, minced
  • 2 peaches, diced into 1/2-inch pieces
  • 1 jalapeño pepper, seeds removed and finely chopped
  • 1/2 small red onion, finely diced

Instructions

  1. Mince the garlic cloves and set aside.
  2. Dice the peaches into 1/2-inch pieces and place in a large mixing bowl.
  3. Halve and pit the cherries, then add them to the bowl with the peaches.
  4. Finely chop the cilantro and set aside.
  5. Remove the seeds from the jalapeño pepper and chop it finely.
  6. Add the minced garlic, chopped cilantro, jalapeño, and diced red onion to the bowl with the peaches and cherries.
  7. Pour in the lime juice and sprinkle the lime zest over the mixture.
  8. Add salt to taste, starting with a pinch and adjusting as needed.
  9. Gently fold everything together with a spoon or spatula, being careful not to crush the fruit pieces.
  10. Transfer the salsa to the refrigerator for at least 15 minutes to allow the flavors to meld together and the salsa to chill.
  11. Stir gently before serving to redistribute the juices. Taste and adjust the seasoning if needed.
