Ingredients

- Juice of 1 1/2 limes plus zest from 1 lime
- 1 cup cherries, halved and pitted
- Salt, to taste
- 1 large handful of fresh cilantro, finely chopped
- 2 garlic cloves, minced
- 2 peaches, diced into 1/2-inch pieces
- 1 jalapeño pepper, seeds removed and finely chopped
- 1/2 small red onion, finely diced
Instructions
- Mince the garlic cloves and set aside.
- Dice the peaches into 1/2-inch pieces and place in a large mixing bowl.
- Halve and pit the cherries, then add them to the bowl with the peaches.
- Finely chop the cilantro and set aside.
- Remove the seeds from the jalapeño pepper and chop it finely.
- Add the minced garlic, chopped cilantro, jalapeño, and diced red onion to the bowl with the peaches and cherries.
- Pour in the lime juice and sprinkle the lime zest over the mixture.
- Add salt to taste, starting with a pinch and adjusting as needed.
- Gently fold everything together with a spoon or spatula, being careful not to crush the fruit pieces.
- Transfer the salsa to the refrigerator for at least 15 minutes to allow the flavors to meld together and the salsa to chill.
- Stir gently before serving to redistribute the juices. Taste and adjust the seasoning if needed.
