- 227 g Salted Butter, cold and cubed
- 200 g Light Brown Sugar
- 100 g Granulated Sugar
- 2 large Eggs
- 2 teaspoons Vanilla Extract
- 188 g All-Purpose Flour
- 179 g Cake Flour
- 1 teaspoon Cornstarch
- 1 teaspoon Baking Soda
- 1 teaspoon Salt
- 340 g Semisweet Chocolate Chips
- 160 g Shredded Sweetened Coconut
- 100 g Caramel Bits or Soft Caramels
Instructions
- Preheat your oven to 200°C (392°F) and line two baking sheets with parchment paper.
- Cream together the cold cubed butter and both sugars in a stand mixer on medium-low speed until combined. Increase to medium-high speed and cream for about 4 minutes until fluffy and light in color.
- Add in the eggs and vanilla extract, mixing on medium speed until just combined.
- Combine the all-purpose flour, cake flour, cornstarch, baking soda, and salt by gradually mixing on low speed until the dough starts to form.
- Fold in the semisweet chocolate chips, shredded coconut, and caramel bits until everything is evenly distributed throughout the dough.
- Scoop out about 8 large dough balls, approximately 170g each, using a large cookie scoop. Place four dough balls per prepared baking sheet.
- Bake for 10-14 minutes until the edges are a lovely golden brown and the centers are slightly soft.
- Cool the cookies on the baking sheets for at least 15 minutes before transferring them to a wire rack.
