  • 1 (28-ounce) can whole peeled tomatoes
  • 2 tbsp apple cider vinegar
  • 2 tbsp white vinegar
  • 1/4 cup water
  • 2 tbsp Erythritol
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp ground allspice
  • 1/4 tsp ground cloves
  • 1 tsp sea salt
  • 1/8 tsp cayenne pepper

Instructions

  1. Add the whole peeled tomatoes to a blender or food processor and blend until smooth.
  2. Pour the blended tomatoes into a medium saucepan and add the apple cider vinegar, white vinegar, and water.
  3. Stir in the Erythritol, garlic powder, onion powder, ground allspice, ground cloves, sea salt, and cayenne pepper if using.
  4. Bring the mixture to a simmer over medium heat, then reduce the heat to low.
  5. Allow the ketchup to simmer for 30 minutes, stirring occasionally to prevent sticking and to ensure even reduction.
  6. Once the ketchup has thickened to your desired consistency, remove it from the heat and allow it to cool.
  7. If you prefer a smoother ketchup, blend the mixture again until it reaches your desired texture.
  8. Taste and adjust the seasoning if necessary.
  9. Transfer the ketchup to a clean jar or bottle and refrigerate. The flavor will continue to develop as it cools.
