Ingredients
Scale
- 1 (28-ounce) can whole peeled tomatoes
- 2 tbsp apple cider vinegar
- 2 tbsp white vinegar
- 1/4 cup water
- 2 tbsp Erythritol
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp ground allspice
- 1/4 tsp ground cloves
- 1 tsp sea salt
- 1/8 tsp cayenne pepper
Instructions
- Add the whole peeled tomatoes to a blender or food processor and blend until smooth.
- Pour the blended tomatoes into a medium saucepan and add the apple cider vinegar, white vinegar, and water.
- Stir in the Erythritol, garlic powder, onion powder, ground allspice, ground cloves, sea salt, and cayenne pepper if using.
- Bring the mixture to a simmer over medium heat, then reduce the heat to low.
- Allow the ketchup to simmer for 30 minutes, stirring occasionally to prevent sticking and to ensure even reduction.
- Once the ketchup has thickened to your desired consistency, remove it from the heat and allow it to cool.
- If you prefer a smoother ketchup, blend the mixture again until it reaches your desired texture.
- Taste and adjust the seasoning if necessary.
- Transfer the ketchup to a clean jar or bottle and refrigerate. The flavor will continue to develop as it cools.
