Ingredients

  • 20 oz refrigerated shredded hash browns
  • 4 tbsp butter, melted
  • 4 large eggs, beaten
  • 1 cup half & half
  • 1 cup chopped or diced ham
  • 1/2 cup thinly sliced green onions
  • 1 cup shredded cheddar cheese

Instructions

  1. Press the hash browns firmly between thick layers of paper towels until all the excess moisture is removed.
  2. Combine the dry potatoes in a mixing bowl with the melted butter.
  3. Transfer the buttered potatoes into a 9″ pie plate, pressing them evenly to form a crust.
  4. Bake the crust at 450°F for 20-25 minutes until golden brown.
  5. Mix beaten eggs, half & half, diced ham, green onions, and cheddar cheese in a large bowl.
  6. Pour the egg mixture into the prepared hash brown crust.
  7. Bake the quiche at 350°F for 30 minutes until golden brown and puffed.
