Delicious Fruity Pebbles Cookie Sandwiches for a Sweet Treat

Ingredients

Scale
  • 1 cup unsalted butter (softened)
  • 1 cup granulated sugar
  • 0.5 cup light brown sugar
  • 2 large eggs (at room temperature)
  • 2 teaspoons pure vanilla extract
  • 2.5 cups all-purpose flour
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt
  • 1.5 cups Fruity Pebbles cereal (plus extra for rolling)
  • 8 ounces cream cheese (full-fat and softened)
  • 0.5 cup unsalted butter (softened)
  • 4 cups powdered sugar (sifted)
  • 1 teaspoon pure vanilla extract
  • 13 tablespoons milk (to adjust frosting consistency)
  • 1 pinch salt (optional)
  • 1 cup extra Fruity Pebbles cereal (for a colorful finish)

Instructions

  1. Preheat your oven to 350°F (175°C) and line two large baking sheets with parchment paper or silicone mats.
  2. Cream together 1 cup of softened unsalted butter, 1 cup of granulated sugar, and ½ cup of light brown sugar in a large mixing bowl.
  3. Add the eggs, one at a time, while reducing the mixer speed to low, then stir in 2 teaspoons of pure vanilla extract.
  4. Whisk together 2 ½ cups of all-purpose flour, 1 teaspoon of baking soda, and ½ teaspoon of salt in a separate medium bowl.
  5. Combine the dry mixture with the wet ingredients on low speed until combined.
  6. Fold in 1 ½ cups of Fruity Pebbles cereal gently using a rubber spatula.
  7. Chill the dough in the refrigerator by covering the bowl with plastic wrap for at least 30 minutes.
  8. Scoop rounded balls of dough about 2 inches apart onto the prepared baking sheets.
  9. Bake the cookies for 9-11 minutes, or until edges are lightly golden brown.
  10. Cool the cookies on baking sheets for about 5 minutes, then transfer them to a wire rack.
  11. Beat together 8 ounces of softened cream cheese and ½ cup of softened butter until smooth.
  12. Add the sifted powdered sugar gradually on low speed, mixing until fully incorporated.
  13. Mix in 1 teaspoon of pure vanilla extract and a pinch of salt, adjusting with milk until desired consistency.
  14. Assemble the cookie sandwiches by spreading the cream cheese frosting between two cooled cookies, then roll the edges in extra Fruity Pebbles.
