  • 50 g Cocoa Powder
  • 150 g Caster Sugar
  • 1 tsp Baking Powder
  • 30 g Cornflour (Cornstarch)
  • 250 ml Full-Fat Milk
  • 1 tbsp Distilled White Vinegar or Apple Cider Vinegar
  • 2 tsp Vanilla Extract
  • 100 ml Flavorless Oil
  • 2 tbsp Instant Espresso Powder
  • 200 ml Hot Water
  • 30 ml Dark Rum, Whiskey, or Irish Cream Liqueur (optional)
  • 500 g Mascarpone Cheese
  • 250 ml Double Cream
  • 100 g Icing Sugar
  • 200 g Caramel
  • 1 tsp Fleur de Sel
  • 200 g Shortbread Biscuits
  • 2 tbsp Cocoa Powder (for dusting)

Instructions

  1. Preheat the Oven to 170ºC (340ºF).
  2. In a bowl, mix together the full-fat milk, distilled vinegar, vanilla extract, and flavorless oil. Allow to sit for about 5 minutes.
  3. Sift together the self-raising flour, cocoa powder, baking powder, cornflour, caster sugar, and a pinch of salt.
  4. Gently pour the wet ingredients into the dry ingredients. Stir until just combined.
  5. Pour the batter into a lined tin and bake for 18-20 minutes. Let it cool before removing it from the tin.
  6. Dissolve the instant espresso powder in hot water. If opted, add a splash of dark rum or Irish cream liqueur. Set aside to cool.
  7. Crush the shortbread biscuits using a rolling pin until you have coarse crumbs.
  8. Microwave the caramel until soft and smooth. Stir in the fleur de sel and let it cool slightly.
  9. In a mixing bowl, beat the mascarpone cheese, double cream, and icing sugar until thick yet smooth.
  10. Dip pieces of the cooled sponge into the espresso, then layer them in your serving dish. Follow with mascarpone cream, shortbread crumbs, and a drizzle of salted caramel. Repeat layers, finishing with cocoa powder.
  11. Wrap the assembled tiramisu and refrigerate for at least 12 hours.
