- 8 cloves Garlic
- 1 medium Yellow Onion
- 2 medium Navel or Mandarin Orange
- 1 tablespoon Fresh Oregano
- 1 teaspoon Lemon Thyme or Regular Thyme
- 1/2 cup Mandarin Squeezed Juice
Instructions
- Preheat oven: Set your oven temperature to 300°F (150°C).
- Heat oil: Pour olive oil into a large, oven-safe skillet over medium-high heat.
- Season pork: Sprinkle kosher salt, black pepper, red chili flakes, dried oregano, and onion powder over the pork shoulder.
- Sear pork: Transfer the pork to the hot skillet and sear it until golden brown, about 3-4 minutes per side.
- Add aromatics: Insert garlic cloves into the scored cuts of the pork and scatter sliced onions and orange slices around the meat.
- Deglaze pan: Pour mandarin juice into the skillet, scraping up any brown bits.
- Braise: Cover the skillet and transfer it to the oven. Let it braise for 2½–3 hours.
- Caramelize fat cap: For the last 10 minutes, remove the lid and increase the oven temperature to 450°F (232°C).
- Rest the meat: Once cooked, let the pork rest for 10–15 minutes before shredding.
