- 16 ounces Cauliflower and Broccoli Florets (fresh veggies)
- 1/4 cup Avocado Oil (for roasting)
- 1 tablespoon Minced Garlic
- 1/4 cup Tahini
- 2 tablespoons Lemon Juice
- 1/2 teaspoon Salt (to taste)
- 1/4 teaspoon Smoked Paprika
- 1/4 teaspoon Chili Powder
- 1 teaspoon Cumin
- 1 teaspoon Coriander
- 1 tablespoon Maple Syrup (for sweetness)
- 2–3 tablespoons Water (to adjust consistency)
- 1/3 cup Toasted Pumpkin Seeds
- 5 pieces Chopped Dates
- 3 tablespoons Minced Dill (plus more for garnish)
Instructions
- Preheat the oven to 400°F. Line a baking sheet with parchment paper.
- Toss broccoli and cauliflower florets in a large bowl with avocado oil and minced garlic. Spread them in a single layer onto the lined baking sheet. Bake for 30 minutes, tossing halfway through until they’re golden and tender.
- Whisk together all sauce ingredients—tahini, lemon juice, salt, smoked paprika, chili powder, cumin, coriander, maple syrup, and water—in a large bowl until you achieve a smooth consistency.
- Chop the dates and mince the dill.
- Combine the roasted cauliflower and broccoli back into the same large bowl with the sauce, dates, dill, and toasted pumpkin seeds. Mix thoroughly until all veggies are well-coated.
- Serve your dish garnished with extra dill and more pumpkin seeds.
