Description

Ingredients

  • 250g self-raising flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon mustard powder
  • 200g grated cheddar cheese
  • 1 egg
  • 175ml milk
  • 75g butter, melted

Instructions

  1. Preheat your oven to 190°C (180°C Fan)/350°F and line a muffin tray with paper cases.
  2. In a mixing bowl, combine the flour, baking powder, and mustard powder. Add the grated cheese and stir to combine.
  3. In a separate bowl, whisk the egg, milk, and melted butter.
  4. Add the wet ingredients to the dry ingredients and gently mix until just combined. Do not overmix.
  5. Spoon the mixture into the paper cases.
  6. Bake for 18-20 minutes until golden brown and a knife inserted comes out clean.
  7. Let the muffins cool in the tin for a few minutes before transferring to a wire rack. Enjoy warm or at room temperature.

Notes

  • If using plain flour, add an extra 1.5 teaspoons of baking powder.
  • For variations, try different cheeses, add herbs, ham, or jalapeños.
