- 1 teaspoon baking powder

- 200g grated cheddar cheese
- 1 egg
- 175ml milk
- 75g butter, melted
Instructions
- Preheat your oven to 190°C (180°C Fan)/350°F and line a muffin tray with paper cases.
- In a mixing bowl, combine the flour, baking powder, and mustard powder. Add the grated cheese and stir to combine.
- In a separate bowl, whisk the egg, milk, and melted butter.
- Add the wet ingredients to the dry ingredients and gently mix until just combined. Do not overmix.
- Spoon the mixture into the paper cases.
- Bake for 18-20 minutes until golden brown and a knife inserted comes out clean.
- Let the muffins cool in the tin for a few minutes before transferring to a wire rack. Enjoy warm or at room temperature.

- If using plain flour, add an extra 1.5 teaspoons of baking powder.
