Ingredients

  • 2 cups Almond flour
  • 1/2 cup Raw cacao
  • 1/4 cup Coconut oil, melted
  • 1/2 cup Organic coconut sugar
  • 1/4 teaspoon Sea salt
  • 1 teaspoon Pure vanilla extract
  • 1 teaspoon Baking soda
  • 1 tablespoon Raw apple cider vinegar
  • 2 Eggs, at room temperature
  • 1 cup Raw cashews, soaked
  • 1/2 cup Water
  • 1/4 cup Nutritional yeast
  • 2 tablespoons Fresh lemon juice
  • 1 teaspoon Apple cider vinegar
  • 1/4 cup Coconut oil or olive oil
  • 1/4 teaspoon Sea salt
  • 23 tablespoons Pure maple syrup

Instructions

  1. Preheat your oven to 350°F and lightly grease your donut pan(s) with coconut oil.
  2. Whisk together the dry ingredients in a bowl: almond flour, cacao powder, coconut sugar, sea salt, and baking soda.
  3. Mix the wet ingredients in a separate bowl: melted coconut oil, eggs, and vanilla. Incorporate the eggs one at a time.
  4. Combine the wet and dry ingredients, stirring well until everything is fully mixed and smooth.
  5. Add the apple cider vinegar to the mixture and whisk vigorously to activate the baking soda.
  6. Pour the batter into a piping bag and squeeze into the donut molds, filling each about ¾ full.
  7. Bake for 12-15 minutes, or until the donuts are puffed and spring back when lightly pressed.
  8. Allow to cool before removing from the pan and transfer to a wire rack.
  9. Blend the frosting ingredients in a food processor until smooth.
  10. Taste the frosting and adjust sweetness with additional maple syrup if desired.
  11. Chill the icing in the refrigerator for up to 4 days.
  12. Frost the donuts with a spatula or dip them for a more indulgent treat.
