Ingredients

- 2 tablespoons Butter (softened) (Or margarine for dairy-free)
- 1 tablespoon Honey (Maple syrup or agave can serve as alternatives)
- 1 teaspoon Fresh Thyme (Can substitute with dried thyme)
- 4 slices Challah or Sourdough Bread (Substitute with gluten-free bread if necessary)
- 4 tablespoons Basil Pesto (Store-bought or homemade)
- 2 ounces Smoked Gouda Cheese (Any melting cheese like cheddar can be used)
- 2 ounces Provolone Cheese (Mozzarella or another mild cheese can be swapped in)
- 6 slices Turkey Breast (Can substitute with chicken or plant-based turkey)
- 1 Honeycrisp Apple (Any sweet and firm apple will work)
- Additional Thyme (optional) (For garnish)
Instructions
- Prepare Honey Thyme Butter: In a small bowl, mix together softened butter, honey, and minced fresh thyme until creamy.
- Assemble Panini: Spread the honey thyme butter on the outer sides of all bread slices. Spread a layer of basil pesto on the inner sides of half the slices. Layer the gouda and provolone cheeses, turkey slices, and honeycrisp apple slices. Drizzle a little more pesto on top before placing the other bread slices butter side up on top.
- Cook Panini: Preheat your panini press or large skillet to medium-high heat. Place each sandwich in the press or skillet and cook until the cheese melts and the bread turns golden brown, about 3-5 minutes.
- Finish and Serve: Once cooked, remove the panini from the heat and cut them in half. Garnish with extra fresh thyme if desired. Serve warm.
