Description
Golden fried zucchini patties with Parmesan, garlic, and breadcrumbs. Crispy outside, tender inside.
Ingredients

- 2 medium zucchinis, grated
- 1 egg
- 1/3 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 clove garlic, minced
- 2 green onions, chopped
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil, for frying
Instructions
- Grate zucchini and squeeze out all excess moisture using a towel.
- In a bowl, mix zucchini with egg, breadcrumbs, Parmesan, garlic, green onions, salt, and pepper.
- Form mixture into small round patties using your hands or a spoon.
- Heat olive oil in a skillet over medium heat. Cook patties 3–4 minutes per side until golden brown.
- Remove patties and drain on paper towels. Serve warm with dipping sauce.
