Instructions

  1. Grate the zucchini using a box grater. Place it in a clean kitchen towel and squeeze out excess moisture.
  2. In a large bowl, mix the grated zucchini, corn kernels, flour, Parmesan cheese, eggs, baking powder, garlic powder, and onion powder. Stir until thoroughly combined.
  3. Add salt and pepper to taste. Incorporate the chopped fresh herbs, mixing well.
  4. In a large skillet, heat oil over medium heat. Use enough oil to generously cover the bottom of the pan, about 1/4 inch deep.
  5. Using a spoon or your hands, scoop out portions of the mixture and form them into patties. Each fritter should be about 2-3 inches wide.
  6. Place fritters in the hot skillet, cooking them in batches. Avoid overcrowding the pan. Fry for about 3-4 minutes on each side until golden brown and crispy.
