- 120 g white chocolate
- 30 g almond paste
- 60 g heavy cream
- 30 g orange juice
- 1 large orange zest
- 1 vanilla bean, split and scraped
- 0.4 g cinnamon
- 300 g oat milk or milk of choice
- 50 g orange ganache
- 2 tablespoons whipped cream
- dusting of cinnamon
- fresh orange zest
- 1 wedge orange
Instructions
- Gently melt the white chocolate and almond paste over a double boiler. Stir occasionally until smooth and creamy, then remove from heat and set aside to cool slightly.
- In a small pot, combine the heavy cream, orange zest, cinnamon, and vanilla bean. Bring to a simmer over medium heat, then turn off the heat and let it steep for 10-15 minutes.
- Pour the steeped cream mixture into the melted white chocolate and almond paste. Use a hand blender to mix until consistent. Slowly add in the orange juice, blending until smooth.
- Transfer the ganache to an airtight container or bowl and chill it in the refrigerator for at least two hours.
- When you’re ready to serve, heat the oat milk to approximately 85°C / 185°F. Be careful not to boil it.
- Take 50g of the chilled orange ganache and blend it with the hot milk until smooth and creamy.
- Pour the warm white chocolate orange almond cocoa into mugs. Top with whipped cream, a dusting of cinnamon, and a sprinkle of fresh orange zest. Finish it off with an orange wedge for presentation!
