Warm Farro Salad with Burrata & Hot Honey Vinaigrette is a deliciously satisfying and vibrant dish that feels indulgent yet nourishing.


Ingredients

  • 2 cups Farro (rinsed)
  • 2 medium Red bell peppers (halved)
  • 2 tablespoons Olive oil (for roasting)
  • 1 teaspoon Kosher salt (to taste)
  • 4 stalks Green onions (sliced)
  • 2 cups Micro arugula (or baby arugula)
  • 6 medium Radishes (thinly shaved)
  • 1 tablespoon Chives (chopped)
  • 8 ounces Burrata cheese (torn into pieces)
  • 1/4 cup Red wine vinegar
  • 1/4 cup Honey
  • 1/4 teaspoon Crushed red pepper (or to taste)
  • 1/2 cup Extra-virgin olive oil

Instructions

  1. Preheat the oven to 425°F and roast the red peppers with olive oil and salt for 30 minutes.
  2. Boil 2 quarts of water, add salt, and cook the rinsed farro for 30 minutes until tender, then drain.
  3. Combine red wine vinegar, honey, and crushed red pepper in a saucepan, simmer for 15 minutes, cool, then whisk in olive oil.
  4. Add sliced green onions to roasted peppers, drizzle with oil, and roast for another 10 minutes; cool and dice peppers.
  5. In a large bowl, mix farro, arugula, diced peppers, green onions, radishes, and chives; add 3/4 of the vinaigrette.
  6. Serve salad topped with burrata, remaining chives, red pepper, and drizzle with remaining vinaigrette.
