Ingredients

- 8 oz super firm tofu
- 1 tbsp white miso paste
- 1 tsp garlic powder
- 1 tsp onion powder
- ¼ tsp poultry seasoning
- ½ tsp salt
- ½ cup water
- 100 grams vital wheat gluten
- 2 tbsp neutral oil
- ¼ cup water, divided
Instructions
- Preheat your oven to 350°F (175°C).
- Blend all ingredients except the vital wheat gluten in a food processor until completely smooth.
- Add the vital wheat gluten slowly, one spoonful at a time, while the processor runs.
- Knead the dough in the processor for 2–3 minutes until it’s smooth, soft, and stretchy.
- Shape the dough into a ball, then divide it into 4 equal pieces.
- Oil a 9×13-inch (23×33 cm) baking dish and place the fillets inside.
- Pour 2 tablespoons of water into the pan, then cover tightly with foil.
- Bake for 30 minutes at 350°F (175°C). Flip the fillets gently, add the remaining 2 tablespoons of water, and bake covered for an additional 20 minutes.
- Coat the fillets with your favorite spice rub, increase the oven temperature to 425°F (220°C), and bake for 10-15 minutes.
- Rest the fillets at room temperature for 10 minutes.
- Optional: For added flavor, coat in sauce, pan-fry, or char on the grill for 2 minutes per side after the 425°F bake.
