Ingredients

  • 8 oz super firm tofu
  • 1 tbsp white miso paste
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ¼ tsp poultry seasoning
  • ½ tsp salt
  • ½ cup water
  • 100 grams vital wheat gluten
  • 2 tbsp neutral oil
  • ¼ cup water, divided

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Blend all ingredients except the vital wheat gluten in a food processor until completely smooth.
  3. Add the vital wheat gluten slowly, one spoonful at a time, while the processor runs.
  4. Knead the dough in the processor for 2–3 minutes until it’s smooth, soft, and stretchy.
  5. Shape the dough into a ball, then divide it into 4 equal pieces.
  6. Oil a 9×13-inch (23×33 cm) baking dish and place the fillets inside.
  7. Pour 2 tablespoons of water into the pan, then cover tightly with foil.
  8. Bake for 30 minutes at 350°F (175°C). Flip the fillets gently, add the remaining 2 tablespoons of water, and bake covered for an additional 20 minutes.
  9. Coat the fillets with your favorite spice rub, increase the oven temperature to 425°F (220°C), and bake for 10-15 minutes.
  10. Rest the fillets at room temperature for 10 minutes.
  11. Optional: For added flavor, coat in sauce, pan-fry, or char on the grill for 2 minutes per side after the 425°F bake.
