Ingredients

Scale
  • 1/2 cup Unsalted Butter or coconut oil for dairy-free
  • 1 cup Granulated Sugar or coconut sugar for less refined option
  • 3 large Eggs (room temperature)
  • 2 teaspoons Ube Extract (or fresh ube if available)

  2. In a large bowl, combine melted butter and granulated sugar until well blended.
  3. Add eggs one by one, mixing thoroughly after each addition, then add ube extract.
  4. Gently add mochiko and baking powder to the wet mixture, stirring until almost combined but still a little lumpy.
  5. Pour in evaporated milk and coconut milk, mixing until the batter is smooth and free of lumps.
  6. Pour the batter into the prepared baking pan and slide it into the oven.
  7. Bake for about 45 minutes or until a toothpick comes out with minimal dry crumbs.
