Instructions

  1. Preheat your oven to 350°F (175°C). Core the apples, leaving the bottoms intact to hold the filling.
  2. In a saucepan, heat 1 tablespoon of olive oil over medium heat. Add the uncooked rice and toast for 2-3 minutes.
  3. Pour in the vegetable or chicken broth. Bring to a boil, then cover, reduce heat to low, and simmer for about 15 minutes, or until rice is cooked.
  4. In a skillet, heat the remaining olive oil. Add chopped onions and sauté until translucent, about 5 minutes.
  5. In a large bowl, combine the cooked rice, sautéed onions, pine nuts, ground cinnamon, allspice, salt, and pepper. Mix well.
  6. Spoon the rice mixture into each cored apple, packing gently.
  7. Arrange stuffed apples in a baking dish. Add 1/4 inch of water to the bottom. Cover with foil and bake for 30 minutes. Remove foil for the last 10-15 minutes to brown tops.
  8. Let cool for 10 minutes. Garnish with parsley before serving.
