- 2 slices of whole-grain bread
- 4–6 ounces sliced turkey breast
- 2 tablespoons basil pesto
- 1/4 cup fresh spinach leaves
- 1/4 cup sliced tomatoes
- 1/4 cup sliced cucumbers
- 1 ounce mozzarella cheese (optional)
- Salt and pepper to taste
- Olive oil (for toasting, optional)
Instructions
- If you prefer crispy bread, lightly toast the slices of whole-grain bread until golden brown.
- On one side of each slice of bread, spread a generous layer of basil pesto.
- Place slices of turkey breast on top of the pesto. You can add as much turkey as you like, depending on your preference.
- Layer fresh spinach leaves, sliced tomatoes, and sliced cucumbers over the turkey.
- If you’re using mozzarella cheese, place it on top of the vegetables.
- Lightly season with salt and pepper to enhance the flavors.
- Place the second slice of bread on top, pesto side down, to complete the sandwich.
- Slice the sandwich in half diagonally if desired, making it easier to handle and more visually appealing.
