  • 2 slices of whole-grain bread
  • 46 ounces sliced turkey breast
  • 2 tablespoons basil pesto
  • 1/4 cup fresh spinach leaves
  • 1/4 cup sliced tomatoes
  • 1/4 cup sliced cucumbers
  • 1 ounce mozzarella cheese (optional)
  • Salt and pepper to taste
  • Olive oil (for toasting, optional)

Instructions

  1. If you prefer crispy bread, lightly toast the slices of whole-grain bread until golden brown.
  2. On one side of each slice of bread, spread a generous layer of basil pesto.
  3. Place slices of turkey breast on top of the pesto. You can add as much turkey as you like, depending on your preference.
  4. Layer fresh spinach leaves, sliced tomatoes, and sliced cucumbers over the turkey.
  5. If you’re using mozzarella cheese, place it on top of the vegetables.
  6. Lightly season with salt and pepper to enhance the flavors.
  7. Place the second slice of bread on top, pesto side down, to complete the sandwich.
  8. Slice the sandwich in half diagonally if desired, making it easier to handle and more visually appealing.
