Instructions

  1. Select Your Roast: Choose a well-marbled tri tip roast, preferably from a local butcher or high-end grocery store for the best flavor and tenderness.
  2. Mix the Seasonings: In a small bowl, blend garlic salt, Lawry’s seasoning salt, kosher salt, black pepper, sugar, garlic powder, and parsley to create a flavorful spice mix.
  3. Prepare for Cooking: If grilling, trim the fat cap from the roast; if roasting, leave it intact for added moisture.
  4. Season the Roast: Generously rub the spice mixture all over the roast. Place it in a large ziplock bag, drizzle with olive oil, seal the bag, and massage the oil into the meat to ensure even coating.
  5. Marinate: Store the seasoned roast in the fridge for about 8 hours, turning occasionally. For added convenience, you can marinate for up to 3 days or as little as 15 minutes if pressed for time.
  6. Preheat for Grilling: If grilling, remove the roast from the fridge 30 minutes before cooking to allow it to reach room temperature. Preheat the grill to high heat.
