  • 2 tablespoons Cornstarch
  • 2 cups Bok Choy
  • 3 tablespoons Soy Sauce (use tamari for gluten-free)
  • 2 cloves Fresh Garlic, Minced
  • 3 tablespoons Neutral Oil with high smoke point
  • Salt to taste
  • Pepper to taste
  • 1 teaspoon Sesame Oil
  • 1 teaspoon Maple Syrup
  • 1 teaspoon Extra Cornstarch (for sauce)
  • Sesame seeds for garnish (optional)

Instructions

  1. Prepare the Tofu: Press the extra firm tofu for 15-20 minutes to remove excess moisture. Cut the pressed tofu into bite-sized cubes. Toss the tofu cubes with salt, pepper, and 2 tablespoons of cornstarch until evenly coated.
  2. Fry Tofu: Heat 3 tablespoons of neutral oil in a large non-stick skillet over medium-high heat. Add the coated tofu cubes in a single layer. Cook for about 5 minutes until golden and crispy on the bottom. Carefully flip the tofu and cook until golden on at least three sides. Remove the crispy tofu from the skillet and set aside.
  3. Make the Sauce: In a small mixing bowl, whisk together 3 tablespoons soy sauce, 1 teaspoon sesame oil, 1 teaspoon maple syrup, minced garlic, and 1 teaspoon extra cornstarch.
  4. Sauté Bok Choy: In the same skillet used for the tofu, add the white parts of the bok choy. Sauté for about 3 minutes until lightly golden. Then, add the bok choy greens and cook for an additional minute until they are tender but still vibrant.
  5. Finish the Stir-Fry: Return the crispy tofu back to the skillet with the bok choy. Pour the prepared sauce over the tofu and bok choy. Gently toss everything together to coat. Cook for about 1 minute until the sauce slightly thickens and blends beautifully with the ingredients.
  6. Serve: Serve the Tofu Bok Choy Stir-Fry immediately. Garnish with sesame seeds if desired.
