- 1 cup Granulated Sugar
- 2 large Eggs
- 2 cups All-Purpose Flour
- 1/2 cup Cocoa Powder
- 1 cup Espresso or Strong Brewed Coffee
- 1 cup Mascarpone Cheese
- 1 cup Heavy Cream
Instructions
- Preheat your oven to 350°F (175°C) and grease a muffin tin or use silicone molds for easier removal.
- In a mixing bowl, cream the softened unsalted butter and granulated sugar until fluffy. Add the eggs one at a time, ensuring they’re well incorporated, then mix in the all-purpose flour and cocoa powder until the dough is smooth.
- Scoop the cookie dough into the prepared muffin tin, pressing it down firmly to form cups. Bake for 10-12 minutes, or until they’re set but still soft in the center.
- In a separate bowl, combine the espresso with mascarpone cheese until smooth and creamy. In another bowl, whip the heavy cream to stiff peaks, then gently fold it into the mascarpone mixture for a light, airy filling.
- Once the cookie cups are completely cool, generously fill each one with the mascarpone filling, allowing it to overflow slightly for that tempting touch.
- Lightly dust the tops with cocoa powder, then refrigerate the assembled cookie cups for at least an hour.
