Description
Super Tender Pineapple Pork for a Sweet and Savory Feast
Ingredients
Scale
- 2 pounds Pork shoulder (Substitute with pork loin for leanness.)
- 1 teaspoon Salt (Use kosher salt for even seasoning.)
- 1 teaspoon Black pepper (Substitute with white pepper for milder taste.)
- 2 tablespoons Fish sauce (Use soy sauce for a vegetarian alternative.)
- 2 tablespoons Tapioca flour (Can use cornstarch interchangeably.)
- 1/4 cup Honey (Maple syrup can be used as a substitute.)
- 2 tablespoons Lemon juice (Lime juice can also be used.)
- 2 tablespoons Shallots (Substitute with onion if necessary.)
- 4 cloves Garlic (Use garlic powder in a pinch.)
- 1 medium Chili (Adjust quantity based on spice tolerance.)
- 1 cup Pineapple (chopped) (Use fresh or canned pineapple.)
- 2 tablespoons Sugar (Can use brown sugar for richer flavor.)
- 1 tablespoon Sriracha (Adjust for milder flavor or substitute with chili paste.)
- 1/4 cup Ketchup (Can use tomato sauce for a less sweet version.)
- 2 tablespoons Oyster sauce (Substitute with hoisin sauce if unavailable.)
- 1/2 cup Water (Can replace with chicken stock for more flavor.)
- 2 tablespoons Coriander (chopped) (Substitute with parsley if needed.)
- Chili flakes (Optional; omit if desired.)
- 2 tablespoons Oil (Use vegetable or canola oil for frying.)
Instructions
- Marinate: In a large bowl, combine the pork shoulder with salt, black pepper, fish sauce, honey, lemon juice, garlic, and chili. Mix well, cover, and let it sit for 30 minutes.
- Prepare Sauce: In a food processor, blend together pineapple, sugar, Sriracha, ketchup, and oyster sauce until smooth. Set this sweet and spicy sauce aside for later!
- Fry Pork: Heat vegetable oil in a shallow pan or wok over medium-high heat. Add the marinated pork and fry until golden brown and crispy, about 5-7 minutes. Transfer to a plate and keep warm.
- Make Slurry: In a small bowl, mix cornstarch with a bit of water until smooth. This will help thicken our sauce beautifully.
- Cook Sauce: In the same frying pan, add your prepared pineapple sauce and bring it to a boil over medium heat. Gently stir in the slurry and let it bubble, thickening for about 3-4 minutes.
- Combine: Carefully add the fried pork back into the pan, tossing to coat each piece in that luscious sauce. Sprinkle with chopped coriander and optional chili flakes for that extra pop of flavor.
- Serve: Dish up your Super Tender Pineapple Pork with a side of steamed rice, making it a complete and satisfying meal.
