- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, chopped
- 1 yellow bell pepper, chopped
- 2 cans (15 oz each) black beans, rinsed and drained
- 1 can (15 oz) corn, drained
- 1 can (15 oz) diced tomatoes, with juice
- 1 can (4 oz) diced green chiles
- 4 cups vegetable broth
- 2 tablespoons taco seasoning (adjust to taste)
- 1 teaspoon cumin
- Salt and pepper to taste
- Fresh cilantro, for garnish
- Avocado, diced (optional)
- Sour cream (optional)
- Shredded cheese (optional)
- Tortilla chips or strips (optional)
Instructions
- In a large pot over medium heat, add the olive oil.
- Once hot, add the chopped onion and sauté until translucent (about 3-4 minutes). Add minced garlic, red and yellow bell peppers, sauté for another 5 minutes.
- Stir in the black beans, corn, diced tomatoes (with juice), and green chiles.
- Pour in vegetable broth and add taco seasoning and cumin. Stir to combine.
- Bring the mixture to a boil, then lower the heat and let it simmer for about 20 minutes to allow flavors to meld.
- After simmering, taste the soup and adjust seasonings with salt and pepper as needed.
- Ladle the soup into bowls and top with fresh cilantro, avocado, sour cream, cheese, and tortilla chips, if desired.
