Description

Tasty Jerk Pork Stew combines rich spices for a vibrant and comforting dish perfect for gatherings.

Ingredients

Scale
  • 1 tsp Ground cinnamon
  • 1 tsp Whole allspice (grind fresh for best flavor)
  • 2 tsp Fresh thyme
  • 1 tsp Ground ginger (or fresh ginger if desired)
  • 1 tsp Ground nutmeg (a pinch enhances warmth)
  • 1 tsp Salt
  • 1 tsp Black pepper
  • 2 stalks Green onions
  • 3 cloves Garlic cloves
  • 1 inch Fresh ginger (peeled and chopped)
  • 1 medium Onion (diced)
  • 2 tbsp Honey
  • 2 whole Scotch bonnet peppers (use less for milder stew)
  • 1 cup Orange juice
  • 2 lbs Pork neck fillet (perfect for slow-cooking)
  • 2 tbsp Vegetable oil (for frying)
  • 4 cups Chicken broth (can substitute with vegetable broth)

Instructions

  1. Prepare the Spice Paste: Begin by grinding the allspice berries in a spice grinder until finely ground. Transfer this aromatic goodness into a food processor for the next step.
  2. Blend Ingredients: Add scotch bonnet chili, fresh ginger, garlic, green onions, thyme, cinnamon, ground ginger, nutmeg, salt, pepper, honey, and orange juice to the allspice. Blitz everything together until you have a smooth and fragrant paste.
  3. Store the Paste: Spoon the prepared spice paste into a jam jar, making sure to press down to eliminate any air bubbles. Pour a layer of neutral oil over the top for storage, keeping it fresh.
  4. Prepare the Pork: Remove the pork from the refrigerator 30 minutes before cooking to allow it to reach room temperature. This ensures even cooking.
  5. Sear the Pork: Heat vegetable oil in a heavy-based casserole over medium-high heat. Sear the pork in batches for 3-4 minutes each until browned on all sides. Transfer the browned meat to a bowl.
  6. Sauté the Onion: Reduce the heat to medium and add the diced onion. Sauté gently, stirring occasionally until the onion is softened and translucent, about 5-7 minutes.

Notes

  • Adjust the number of scotch bonnet peppers to control spiciness.
  • Serve with rice or bread for a complete meal.
