- 2 tablespoons Dijon Mustard
- 2 tablespoons Dried Minced Onion (Can substitute with fresh onions)
- 6 cloves Garlic (Roast for enhanced sweetness if desired)
- 2 sprigs Rosemary
- 2 sprigs Thyme
- 1 tablespoon Kosher Salt (Adjust to taste)
- 1 teaspoon Black Pepper (Adjust to taste)
- 1 large Red Onion (Cut into thick rounds)
- 3 medium Slightly Tart Apples (Use firm types for best results)
Instructions
- Preheat the oven to 325°F.
- Trim excess fat from the pork shoulder and season liberally with kosher salt and black pepper.
- Heat neutral cooking oil in a Dutch oven over medium-high heat; sear the pork until deeply browned on all sides for about 8-10 minutes.
- Prepare the braising liquid by whisking together fresh apple cider, chicken broth, Dijon mustard, and dried minced onion in a separate bowl.
- Nestle the garlic cloves, rosemary, and thyme sprigs around the seared pork in the Dutch oven, then pour the prepared braising liquid over it. Cover and transfer to the preheated oven.
- Braise for approximately 3 hours, flipping the pork halfway through, until it’s fork-tender.
- Add sliced red onion and apple wedges during the last 30-40 minutes of braising.
- Let the pork rest in the braising liquid for 30 minutes before serving.
