Ingredients

  • 1 pound boneless chicken thighs, cut into bite-sized pieces
  • 2 tablespoons vegetable oil
  • 4 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup broccoli florets
  • ¼ cup soy sauce
  • ¼ cup honey
  • 2 tablespoons chili sauce (adjust according to desired heat level)
  • 1 tablespoon rice vinegar
  • 1 tablespoon lime juice
  • ½ teaspoon crushed red pepper flakes (optional)
  • Fresh cilantro, for garnish
  • Cooked jasmine rice, for serving

Instructions

  1. In a bowl, mix the soy sauce, honey, chili sauce, rice vinegar, lime juice, and crushed red pepper flakes. Add the chicken pieces, coat well, and let it marinate for about 10 minutes.
  2. In a large skillet or wok, heat the vegetable oil over medium-high heat.
  3. Add the marinated chicken (reserve the marinade) to the skillet. Cook for 5-7 minutes until browned and cooked through, stirring occasionally.
  4. Add the minced garlic, ginger, sliced bell peppers, and broccoli florets. Stir-fry everything together for about 3-4 minutes or until the vegetables are vibrant and tender.
  5. Pour the reserved marinade into the skillet. Cook for another 2-3 minutes, allowing the sauce to thicken slightly and coat the chicken and vegetables.
  6. Taste the sauce and adjust the seasoning if needed. You can add more honey for sweetness or chili sauce for more heat.
  7. Remove from heat and garnish with fresh cilantro before serving.
  8. Spoon the Sweet And Spicy Thai Chicken over a bed of cooked jasmine rice.
