- 1 pound boneless chicken thighs, cut into bite-sized pieces
- 2 tablespoons vegetable oil
- 4 cloves garlic, minced
- 1 tablespoon ginger, minced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 cup broccoli florets
- ¼ cup soy sauce
- ¼ cup honey
- 2 tablespoons chili sauce (adjust according to desired heat level)
- 1 tablespoon rice vinegar
- 1 tablespoon lime juice
- ½ teaspoon crushed red pepper flakes (optional)
- Fresh cilantro, for garnish
- Cooked jasmine rice, for serving
Instructions
- In a bowl, mix the soy sauce, honey, chili sauce, rice vinegar, lime juice, and crushed red pepper flakes. Add the chicken pieces, coat well, and let it marinate for about 10 minutes.
- In a large skillet or wok, heat the vegetable oil over medium-high heat.
- Add the marinated chicken (reserve the marinade) to the skillet. Cook for 5-7 minutes until browned and cooked through, stirring occasionally.
- Add the minced garlic, ginger, sliced bell peppers, and broccoli florets. Stir-fry everything together for about 3-4 minutes or until the vegetables are vibrant and tender.
- Pour the reserved marinade into the skillet. Cook for another 2-3 minutes, allowing the sauce to thicken slightly and coat the chicken and vegetables.
- Taste the sauce and adjust the seasoning if needed. You can add more honey for sweetness or chili sauce for more heat.
- Remove from heat and garnish with fresh cilantro before serving.
