  • 2 cups cooked chicken breast, shredded or chopped
  • ½ cup sweet chili sauce
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 1 teaspoon lime juice
  • 4 large flour tortillas
  • 1 cup shredded lettuce
  • 1 cup shredded carrots
  • ½ red bell pepper, thinly sliced
  • ¼ cup fresh cilantro, chopped
  • Optional: drizzle of mayo or Greek yogurt

Instructions

  1. In a skillet over medium heat, combine the cooked chicken with sweet chili sauce, soy sauce, sesame oil, and lime juice. Stir and cook for 3 to 4 minutes until the chicken is heated through and fully coated in the sauce.
  2. Warm the tortillas in a dry skillet or microwave until soft and pliable.
  3. Lay each tortilla flat and layer with lettuce, carrots, bell pepper slices, and sauced chicken. Sprinkle with chopped cilantro and add an optional drizzle of mayo or Greek yogurt if desired.
  4. Fold in the sides of the tortilla, then roll up tightly from the bottom to form a wrap. Slice in half and serve immediately, or wrap tightly in foil for an on-the-go meal.
