Bright Sweet Chermoula Tuna Tartare with Fresh Cucumber Noodles. This dish is fresh and vibrant, perfect for summer dining.
Ingredients

- 500 g sushi grade tuna steaks
- 1 tablespoon spicy harissa
- 1 pinch saffron
- Salt to taste
- 3 tablespoons olive oil
- 2 tablespoons honey
- 2 cloves garlic, finely chopped
- 2 tablespoons lemon juice
- 1 zest of a lemon
- 1 bunch coriander, finely chopped
- 2 teaspoons paprika
- 1 teaspoon ground cumin
- 3 large cucumbers
- 1 tablespoon toasted sesame seeds
Instructions
- Prepare the Chermoula by combining olive oil, honey, spicy harissa, finely chopped garlic, lemon juice, lemon zest, chopped coriander, paprika, cumin, saffron, and a pinch of salt in a mixing bowl. Stir well until smooth.
- Marinate the Tuna by placing finely diced sushi-grade tuna in a separate bowl. Add the prepared chermoula and gently toss to coat evenly. Cover and refrigerate for about 2 hours.
- Make Cucumber Noodles by using a spiralizer or julienne peeler to create fresh cucumber noodles from the cucumbers. Pat them dry to keep your dish crisp.
- Assemble the Dish by dividing the cucumber noodles among four plates and topping each with marinated tuna. Garnish with lemon zest and toasted sesame seeds.
