Description

Bright Sweet Chermoula Tuna Tartare with Fresh Cucumber Noodles. This dish is fresh and vibrant, perfect for summer dining.


Ingredients

  • 500 g sushi grade tuna steaks
  • 1 tablespoon spicy harissa
  • 1 pinch saffron
  • Salt to taste
  • 3 tablespoons olive oil
  • 2 tablespoons honey
  • 2 cloves garlic, finely chopped
  • 2 tablespoons lemon juice
  • 1 zest of a lemon
  • 1 bunch coriander, finely chopped
  • 2 teaspoons paprika
  • 1 teaspoon ground cumin
  • 3 large cucumbers
  • 1 tablespoon toasted sesame seeds

Instructions

  1. Prepare the Chermoula by combining olive oil, honey, spicy harissa, finely chopped garlic, lemon juice, lemon zest, chopped coriander, paprika, cumin, saffron, and a pinch of salt in a mixing bowl. Stir well until smooth.
  2. Marinate the Tuna by placing finely diced sushi-grade tuna in a separate bowl. Add the prepared chermoula and gently toss to coat evenly. Cover and refrigerate for about 2 hours.
  3. Make Cucumber Noodles by using a spiralizer or julienne peeler to create fresh cucumber noodles from the cucumbers. Pat them dry to keep your dish crisp.
  4. Assemble the Dish by dividing the cucumber noodles among four plates and topping each with marinated tuna. Garnish with lemon zest and toasted sesame seeds.
