  • 2 tablespoons vegetable oil
  • 3 tablespoons vinegar (black or white)
  • 2 tablespoons soy sauce
  • 1 tablespoon chili oil (adjust to taste)
  • 1 tablespoon sesame oil
  • 1 clove garlic, minced
  • 1 teaspoon ginger, minced
  • 1 carrot, julienned
  • 1 cucumber, thinly sliced
  • 3 green onions, chopped
  • 50g cilantro, chopped
  • Salt to taste
  • Crushed peanuts for garnish (optional)
  • Sesame seeds for garnish (optional)

Instructions

  1. Soak the glass noodles in boiling water for about 10 minutes until they soften. Drain and set aside.
  2. In a bowl, combine vinegar, soy sauce, chili oil, sesame oil, garlic, ginger, and salt. Mix well.
  3. In a pan, heat vegetable oil over medium heat. Add carrots and cook until slightly soft, about 2-3 minutes.
  4. Add the drained glass noodles into the pan with cooked carrots. Pour the sauce over the noodles and toss to coat evenly.
  5. Remove from heat, then add cucumber, green onions, and cilantro. Toss gently.
  6. Taste and adjust the seasoning with more salt or vinegar if necessary.
  7. Transfer to a serving bowl and top with crushed peanuts and sesame seeds if desired.
