Ingredients
- 1 lb boneless, skinless chicken breasts
- 2 cups corn (fresh, frozen, or canned)
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 can (15 oz) white beans, drained and rinsed
- 4 cups chicken broth
- 1 can (4 oz) diced green chiles
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- ½ teaspoon smoked paprika
- Salt and pepper to taste
- 1 tablespoon olive oil
- 1 cup heavy cream
- 1 cup shredded Monterey Jack cheese
- Optional toppings: crumbled queso fresco, chopped cilantro, lime wedges, diced avocado
Instructions
- Heat olive oil in a large pot over medium heat.
- Add diced onions and sauté until translucent, about 5 minutes.
- Stir in minced garlic and cook for another minute until fragrant.
- Season the onions and garlic with ground cumin, chili powder, and smoked paprika.
- Add the boneless, skinless chicken breasts to the pot, stirring to coat in the spices.
- Pour in the chicken broth, corn, and diced green chiles. Bring to a simmer.
- Cover and cook for 15-20 minutes, or until the chicken is cooked through.
- Remove the chicken from the pot and shred with two forks.
- Return the shredded chicken to the pot, then stir in the white beans and heavy cream.
- Allow the chili to simmer for an additional 10 minutes, until it thickens slightly.
- Stir in shredded Monterey Jack cheese until melted and well incorporated.
- Taste and adjust seasoning with salt and pepper as needed.
