Irresistible Strawberry Champagne Tiramisu for Sweet Celebration

- 1/3 cup Sugar
- 1/2 cup Water
- 2 lbs Fresh strawberries
- 3 tbsp Sugar
- 6 large egg yolks
- 1 cup Sugar
- 1.25 cups Mascarpone cheese
- 1.75 cups Heavy whipping cream
- 1 package Ladyfingers (17.5 ounce)
- 1.25 cups Heavy whipping cream
- 1/2 cup Powdered sugar
- 3/4 tsp Vanilla extract
- Straawberries (extra for decorating)
Instructions
- Prepare the Champagne Mixture: In a small saucepan, combine the champagne and sugar over medium-low heat. Stir until the sugar dissolves, then remove from heat and add water. Refrigerate until cool.
- Toss the Strawberries: In a bowl, mix the diced strawberries with sugar. Gently toss to coat every berry, allowing their juices to mingle. Set aside.
- Make the Mascarpone Filling: In a double boiler or metal bowl over simmering water, whisk together egg yolks and sugar for about 5 minutes until thick and pale yellow. Allow it to cool slightly.
- Whip the Cream: In a large mixer bowl, whip the cold heavy cream on high speed until stiff peaks form.
- Combine and Fold: Once the egg mixture has cooled, gently fold in the mascarpone cheese until smooth. Carefully incorporate the whipped cream in two parts.
- Assemble the Layers: Dip each ladyfinger briefly in the chilled champagne mixture (3-5 seconds) before layering them in a 9×13 pan.
- Layer the Strawberries: Spread half of the sugared strawberries evenly over the ladyfingers.
- Spread the Mascarpone Filling: Spoon half of the mascarpone mixture evenly over the strawberries.
- Repeat the Assembly: Layer the remaining ladyfingers, the rest of the strawberries, and top with the remaining mascarpone filling.
- Decorate the Top: Whip the additional heavy cream, powdered sugar, and vanilla extract together until stiff peaks form for decoration.
- Chill: Cover and refrigerate for at least 3-4 hours, or overnight for best flavor melding.
