Ingredients

  • 2 lbs Fresh strawberries
  • 3 tbsp Sugar
  • 6 large egg yolks
  • 1 cup Sugar
  • 1.25 cups Mascarpone cheese
  • 1.75 cups Heavy whipping cream
  • 1 package Ladyfingers (17.5 ounce)
  • 1.25 cups Heavy whipping cream
  • 1/2 cup Powdered sugar
  • 3/4 tsp Vanilla extract
  • Straawberries (extra for decorating)

Instructions

  1. Prepare the Champagne Mixture: In a small saucepan, combine the champagne and sugar over medium-low heat. Stir until the sugar dissolves, then remove from heat and add water. Refrigerate until cool.
  2. Toss the Strawberries: In a bowl, mix the diced strawberries with sugar. Gently toss to coat every berry, allowing their juices to mingle. Set aside.
  3. Make the Mascarpone Filling: In a double boiler or metal bowl over simmering water, whisk together egg yolks and sugar for about 5 minutes until thick and pale yellow. Allow it to cool slightly.
  4. Whip the Cream: In a large mixer bowl, whip the cold heavy cream on high speed until stiff peaks form.
  5. Combine and Fold: Once the egg mixture has cooled, gently fold in the mascarpone cheese until smooth. Carefully incorporate the whipped cream in two parts.
  6. Assemble the Layers: Dip each ladyfinger briefly in the chilled champagne mixture (3-5 seconds) before layering them in a 9×13 pan.
  7. Layer the Strawberries: Spread half of the sugared strawberries evenly over the ladyfingers.
  8. Spread the Mascarpone Filling: Spoon half of the mascarpone mixture evenly over the strawberries.
  9. Repeat the Assembly: Layer the remaining ladyfingers, the rest of the strawberries, and top with the remaining mascarpone filling.
  10. Decorate the Top: Whip the additional heavy cream, powdered sugar, and vanilla extract together until stiff peaks form for decoration.
  11. Chill: Cover and refrigerate for at least 3-4 hours, or overnight for best flavor melding.
