Description

A quick and easy vegan stir-fry featuring earthy mushrooms, vibrant vegetables, and savory noodles coated in a flavorful garlic and ginger sauce. This umami-packed dish is perfect for a weeknight meal.


Ingredients

  • 2 tbsp Peanut Oil (or vegetable/canola oil)
  • 12 oz Shiitake, Oyster, and Enoki Mushrooms (or cremini/button mushrooms)
  • 1 cup Carrots, thinly sliced (or bell peppers/snow peas)
  • 1 small Yellow Onion, thinly sliced (or shallots)
  • 3 heads Baby Bok Choy, sliced (or kale/spinach)
  • 1 bunch Green Onions, sliced
  • 1/4 cup Vegetable Broth (or water/low-sodium chicken broth)
  • 2 tbsp Low Sodium Soy Sauce (or tamari)
  • 1 tbsp Rice Vinegar (or apple cider vinegar/lemon juice)
  • 2 tsp Red Chili Flakes (adjust to taste)
  • 4 cloves Garlic, minced
  • 2 tbsp Ginger, minced
  • 1/2 tbsp Cornstarch (optional, or arrowroot powder)
  • 1/2 lb Ramen or Yakisoba Noodles
  • Chili Oil for garnish (optional)
  • Toasted Sesame Seeds for garnish (optional)

Instructions

  1. Slice all vegetables and organize them in bowls. Whisk together the sauce ingredients: broth, soy sauce, rice vinegar, chili flakes, half of the garlic, and cornstarch until smooth.
  2. Boil ramen noodles according to package directions. Rinse under cold water to stop cooking.
  3. Heat wok or large skillet over high heat. Add peanut oil. Add carrots and shiitake mushrooms; stir-fry for 2-3 minutes until tender.
  4. Add bok choy (base parts) and ginger. Add the prepared sauce and noodles. Toss to ensure even coating.
  5. Incorporate previously cooked mushrooms and vegetables back into the pan. Sprinkle reserved bok choy greens on top.
  6. Plate the stir-fry. Garnish with sesame seeds, sliced green onion tops, and chili oil if desired. Serve hot.
