Description

Sticky Sweet Spicy Asian Salmon & Rice Noodles is a vibrant dish of salmon glazed in a sweet and spicy marinade, served with tender rice noodles.


Ingredients

  • 1 fillet Salmon (wild-caught recommended)
  • 2 tablespoons Rice vinegar
  • 2 tablespoons Tamari or soy sauce
  • 1 tablespoon Gochujang or Sriracha
  • 1 teaspoon Sambal
  • 2 tablespoons Apricot jam or honey
  • 1 teaspoon Yellow mustard
  • 3 cloves Fresh garlic (crushed)
  • 8 ounces Rice noodles
  • 1 medium English cucumber (sliced into matchsticks)
  • 1 medium Red bell pepper (thinly sliced)
  • Additional vegetables (optional)
  • 2 tablespoons Sweet chili sauce
  • 1 tablespoon Toasted sesame seeds
  • 1 teaspoon Black pepper (freshly cracked)
  • 1/4 cup Chopped cilantro
  • 1/4 cup Dry-roasted salted peanuts
  • 1 each Fresno chilies
  • 2 stalks Green onions (sliced)

Instructions

  1. Whisk together all the noodle sauce ingredients in a bowl and set aside.
  2. Preheat the oven to 375°F (190°C). Line a rimmed baking sheet with parchment paper.
  3. Combine the marinade: In a bowl, whisk together the rice vinegar, tamari or soy sauce, gochujang, sambal, apricot jam or honey, mustard, and crushed garlic until smooth.
  4. Coat the salmon: Pour the marinade over the salmon fillet, ensuring it’s fully coated.
  5. Bake the salmon: Place the salmon on the baking sheet and bake for 20-22 minutes or until it flakes easily.
  6. Cook the rice noodles according to the package instructions, rinse under cold water, then transfer to a large bowl.
  7. Toss in the veggies: Add sliced cucumber, red bell pepper, and any additional veggies to the noodles.
  8. Plate and serve: Sprinkle half of the garnishes over the salmon and serve alongside the noodles.
