Ingredients

  • 4 pieces Pork scotch steaks (150g each)
  • 0.5 cup Char siu sauce (for marinating)
  • 1 tbsp Vegetable oil (for sautéing)
  • 2 tbsp Additional vegetable oil (for fried rice)
  • 4 cloves Garlic (roughly chopped)
  • 1 piece Brown onion (cut into wedges)
  • 200 g Asian greens (thick stems finely sliced and leaves sliced)
  • 2 pieces Eggs (lightly beaten)
  • 3 cups Cooked jasmine rice (preferably cooked the day before)
  • 2 tbsp Soy sauce (for flavor)
  • 2 tbsp Chinese Shaoxing wine (for complexity)
  • 1 tsp Sesame oil (for nutty richness)
  • 1 tsp Sugar (to balance flavors)
  • 0.25 cup Chinese garlic chives (optional, roughly chopped)
  • pinch Ground white pepper (for warmth)
  • Spring onion (finely sliced, for garnish)

Instructions

  1. Marinate the Pork: Place the pork scotch steaks in a bowl and toss with the char siu sauce until evenly coated. Let it marinate for about 15-30 minutes.
  2. Cook the Pork: Heat a pan over high heat and add 1 tablespoon of vegetable oil. Cook the marinated pork steaks for 3-4 minutes on each side, until slightly charred and just cooked through. Transfer to a plate and set aside.
  3. Prepare the Sauce: In a small bowl, combine the soy sauce, Shaoxing wine, sesame oil, and sugar. Set this mixture aside.
  4. Stir-fry the Vegetables: In a wok or frying pan, heat 2 tablespoons of vegetable oil over high heat. Add the brown onion and stir-fry for 1 minute until softened, then add the garlic and stir-fry for an additional 30 seconds. Incorporate the Asian greens and stir-fry until tender.
  5. Add the Eggs and Rice: Push the stir-fried veggies to one side of the pan. Pour the beaten eggs into the empty side and let them set before mixing everything together. Add the garlic chives, cooked rice, soy sauce mixture, and white pepper. Stir-fry until thoroughly coated.
  6. Serve the Dish: Divide the fried rice among serving bowls. Slice the pork and arrange it on top. Drizzle with any collected pan juices and sprinkle with finely sliced spring onion. Serve immediately.
