  • 1 pound beef steak (sirloin or ribeye), trimmed and diced
  • 1 tablespoon black peppercorns, crushed
  • 3 tablespoons olive oil
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 4 cups beef broth
  • 1 cup heavy cream
  • 1 tablespoon Dijon mustard
  • 2 tablespoons Worcestershire sauce
  • Salt, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Season the diced steak with crushed black pepper and a pinch of salt.
  2. Heat 2 tablespoons of olive oil in a large pot over medium-high heat. Add the steak and cook until browned on all sides, about 4-5 minutes. Remove the steak from the pot and set aside.
  3. In the same pot, add the remaining tablespoon of olive oil. Add the chopped onion and sauté until translucent, about 3-4 minutes. Stir in the minced garlic and cook for an additional minute.
  4. Pour the beef broth into the pot, scraping up any brown bits from the bottom for added flavor. Bring the mixture to a boil.
  5. Lower the heat to a simmer and add the heavy cream. Mix well until fully incorporated.
  6. Stir in the Dijon mustard and Worcestershire sauce, allowing the flavors to meld together for 5 minutes.
  7. Add the browned steak back into the soup. Simmer for another 5-10 minutes until everything is heated through.
  8. Taste and adjust seasoning with additional salt and pepper if needed.
  9. Ladle the soup into bowls and garnish with fresh parsley.
