- 1 pound beef steak (sirloin or ribeye), trimmed and diced
- 1 tablespoon black peppercorns, crushed
- 3 tablespoons olive oil
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 4 cups beef broth
- 1 cup heavy cream
- 1 tablespoon Dijon mustard
- 2 tablespoons Worcestershire sauce
- Salt, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Season the diced steak with crushed black pepper and a pinch of salt.
- Heat 2 tablespoons of olive oil in a large pot over medium-high heat. Add the steak and cook until browned on all sides, about 4-5 minutes. Remove the steak from the pot and set aside.
- In the same pot, add the remaining tablespoon of olive oil. Add the chopped onion and sauté until translucent, about 3-4 minutes. Stir in the minced garlic and cook for an additional minute.
- Pour the beef broth into the pot, scraping up any brown bits from the bottom for added flavor. Bring the mixture to a boil.
- Lower the heat to a simmer and add the heavy cream. Mix well until fully incorporated.
- Stir in the Dijon mustard and Worcestershire sauce, allowing the flavors to meld together for 5 minutes.
- Add the browned steak back into the soup. Simmer for another 5-10 minutes until everything is heated through.
- Taste and adjust seasoning with additional salt and pepper if needed.
- Ladle the soup into bowls and garnish with fresh parsley.
