  • 1 clove Garlic (grated or finely chopped)
  • 8 oz Cream cheese (at room temperature)
  • 1 teaspoon Zest of lemon (optional)
  • 1/4 teaspoon Crushed red pepper flakes
  • to taste Kosher salt
  • 1 large Egg (whisked with heavy cream)
  • 2 tablespoons Heavy cream (for egg wash)
  • 1 cup All-purpose flour (for dusting)
  • 1 package Puff pastry (17-oz., thawed)
  • to taste Everything bagel seasoning (or toasted sesame seeds)

Instructions

  1. Prepare the Filling: In a large bowl, mix together the thawed spinach, chopped artichokes, Parmesan, Gruyère, white cheddar, garlic, cream cheese, lemon zest (if using), red pepper flakes, and salt.
  2. Roll the Dough: In a small bowl, whisk the egg and heavy cream together. On a lightly floured surface, roll both sheets of puff pastry to a 10″ x 10″ square. Cut each square in half to create 2 rectangles.
  3. Shape the Rolls: With the longer edge of a rectangle facing you, pierce the dough all over with a fork. Spoon one-quarter of the spinach mixture in a single rope along the edge of the dough closest to you. Brush the far edge with egg wash, then roll the dough over the filling tightly. Use a fork to gently crimp the edge, sealing it well. Repeat with the remaining dough and filling to create 4 logs. Freeze the rolls on a parchment-lined baking sheet for 20 minutes.
  4. Bake the Rolls: Arrange a rack in the center of your oven and preheat to 425°F. Slice each log into 4 pieces. Brush each piece with the egg wash and sprinkle with everything bagel seasoning.
  5. Cool and Enjoy: Bake the rolls in the preheated oven until the dough is golden brown, about 25 minutes. Let them cool slightly before serving.
