Instructions
- Toast the cumin seeds and Sichuan peppercorns for about 1-2 minutes until fragrant, then crush them lightly with a mortar and pestle.
- Toss the lamb strips with the crushed spice blend, ground cumin, kosher salt, and dried red chiles.
- Heat a large skillet or wok on high, pour in the peanut oil, swirling to coat the bottom evenly.
- Stir-fry the white onion and scallion pieces until lightly charred yet crisp, about 2 minutes, and keep them warm.
- Add the seasoned lamb and dried chiles to the hot skillet. Stir-fry until browned, approximately 2 minutes, then add garlic, soy sauce, and Chinese cooking sherry until liquid evaporates.
- Return the cooked onions and scallions to the skillet, mix everything together, and fold in fresh cilantro before serving.
