  • 1 medium White Onion
  • 2 stalks Scallions
  • 3 cloves Garlic
  • 2 tablespoons Peanut Oil
  • 2 tablespoons Soy Sauce
  • 1 tablespoon Chinese Cooking Sherry (or dry sherry)
  • 1/4 cup Fresh Cilantro Sprigs

Instructions

  1. Toast the cumin seeds and Sichuan peppercorns for about 1-2 minutes until fragrant, then crush them lightly with a mortar and pestle.
  2. Toss the lamb strips with the crushed spice blend, ground cumin, kosher salt, and dried red chiles.
  3. Heat a large skillet or wok on high, pour in the peanut oil, swirling to coat the bottom evenly.
  4. Stir-fry the white onion and scallion pieces until lightly charred yet crisp, about 2 minutes, and keep them warm.
  5. Add the seasoned lamb and dried chiles to the hot skillet. Stir-fry until browned, approximately 2 minutes, then add garlic, soy sauce, and Chinese cooking sherry until liquid evaporates.
  6. Return the cooked onions and scallions to the skillet, mix everything together, and fold in fresh cilantro before serving.
