Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, minced
  • 1 teaspoon smoked paprika
  • ½ teaspoon cayenne pepper (adjust to taste)
  • 1 tablespoon soy sauce
  • 1 tablespoon lime juice
  • Salt and pepper to taste
  • 1 cup rice crisps (can be store-bought or homemade)
  • Fresh cilantro (for garnish)

Instructions

  1. Rinse the shrimp under cold water and pat dry with paper towels.
  2. In a bowl, combine shrimp with olive oil, garlic, ginger, smoked paprika, cayenne pepper, soy sauce, lime juice, salt, and pepper. Toss well to coat, then let marinate for 10 minutes.
  3. Heat a non-stick skillet over medium-high heat. Add the marinated shrimp and cook for 2–3 minutes on each side until they turn pink and opaque.
  4. If using homemade rice crisps, heat a separate pan and add a small hint of oil. Carefully add in the rice and let it fry until golden and crunchy. This usually takes about 5–7 minutes.
  5. Once the shrimp are cooked and the rice crisps are ready, remove from heat. Mix the shrimp gently with the rice crisps in the skillet to coat them evenly.
  6. Transfer the mixture to a serving plate and top with fresh cilantro for a burst of color and flavor.
  7. For the best texture, enjoy right after cooking.
