- 1 pound large shrimp, peeled and deveined
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 teaspoon fresh ginger, minced

- ½ teaspoon cayenne pepper (adjust to taste)
- 1 tablespoon soy sauce
- 1 tablespoon lime juice
- Salt and pepper to taste
- 1 cup rice crisps (can be store-bought or homemade)
- Fresh cilantro (for garnish)
Instructions
- Rinse the shrimp under cold water and pat dry with paper towels.
- In a bowl, combine shrimp with olive oil, garlic, ginger, smoked paprika, cayenne pepper, soy sauce, lime juice, salt, and pepper. Toss well to coat, then let marinate for 10 minutes.
- Heat a non-stick skillet over medium-high heat. Add the marinated shrimp and cook for 2–3 minutes on each side until they turn pink and opaque.
- If using homemade rice crisps, heat a separate pan and add a small hint of oil. Carefully add in the rice and let it fry until golden and crunchy. This usually takes about 5–7 minutes.
- Once the shrimp are cooked and the rice crisps are ready, remove from heat. Mix the shrimp gently with the rice crisps in the skillet to coat them evenly.
- Transfer the mixture to a serving plate and top with fresh cilantro for a burst of color and flavor.
- For the best texture, enjoy right after cooking.
