Description

Spicy chicken rolls are a delicious sushi roll filled with spicy chicken, avocado, and cucumber, all wrapped in seaweed and rice. They are perfect for impressing friends and family while enjoying a homemade sushi experience. This recipe is simple and customizable, making it ideal for those who want to try making sushi at home without the fuss.


Ingredients

  • 1 cup shredded chicken (canned or rotisserie)
  • 3 ½ tablespoons mayonnaise
  • 1 tablespoon Sriracha
  • 2 sheets seaweed (cut in half)
  • 1 ½ cups cooked rice
  • Rice seasoning (or toasted sesame seeds)
  • 1 Persian cucumber (sliced)
  • 1 large avocado (sliced)

Instructions

  1. Prepare the Spicy Chicken: Mix shredded chicken with mayonnaise and Sriracha. Set aside.
  2. Prepare the Seaweed: Place a half sheet of seaweed on a cutting board and spread ¼ to ⅓ cup of warm rice evenly across the seaweed. Wet your fingers slightly to prevent the rice from sticking.
  3. Add Seasoning: Sprinkle rice seasoning over the rice.
  4. Flip the Seaweed: Flip the seaweed with rice side down, so the seaweed is facing up.
  5. Assemble the Roll: Place 3 tablespoons of spicy chicken in a thin layer along the bottom of the seaweed. Add cucumber and avocado slices on top.
  6. Roll the Sushi: Starting from the bottom, carefully roll the seaweed and ingredients tightly, reaching the other edge. The rice side should be on the outside.
  7. Press and Slice: Use a bamboo sushi mat (in a Ziploc bag to avoid rice sticking) to gently press and smooth the roll. Slice the roll using a sharp knife, sawing back and forth without pressing down. Cut the roll into 6-8 pieces.
  8. Serve: Serve the spicy chicken rolls with soy sauce, pickled ginger, and/or wasabi.

Notes

  • Adjust Sriracha amount for desired spice level.
  • Experiment with other vegetable fillings like carrots or bell peppers.
  • For a protein boost, add cooked shrimp or crab.
