- 1/2 cup Unsalted butter
- 4 cloves Garlic, minced
- 2 cups Heavy cream
- 1 teaspoon Italian seasoning
- 1 tablespoon Crushed Calabrian chili pepper paste
- 1/2 teaspoon Ground black pepper
- 1 cup Grated Parmigiano Reggiano
- to taste Kosher salt
- 12 ounces Trottole pasta
- optional leaves Fresh basil
Instructions
- Start by bringing a large pot of water to a rolling boil.
- In a large pan over medium heat, add the unsalted butter. Allow it to melt gently, then add minced garlic.
- Gradually whisk in the heavy cream, Italian seasoning, crushed Calabrian chili paste, and black pepper. Simmer on medium-low for about 5 minutes, stirring often.
- Remove the pan from heat, whisk in the grated Parmigiano Reggiano, then return to low heat, stirring constantly until smooth.
- Add kosher salt to boiling water and cook the trottoli pasta until al dente. Reserve a cup of pasta water.
- Drain pasta, add to the creamy sauce, and stir to coat. Thin the sauce with reserved pasta water as needed. Serve and enjoy!
