Ingredients

  • 4 cloves Garlic, minced
  • 2 cups Heavy cream
  • 1 teaspoon Italian seasoning
  • 1 tablespoon Crushed Calabrian chili pepper paste
  • 1/2 teaspoon Ground black pepper
  • 1 cup Grated Parmigiano Reggiano
  • to taste Kosher salt
  • 12 ounces Trottole pasta
  • optional leaves Fresh basil

Instructions

  1. Start by bringing a large pot of water to a rolling boil.
  2. In a large pan over medium heat, add the unsalted butter. Allow it to melt gently, then add minced garlic.
  3. Gradually whisk in the heavy cream, Italian seasoning, crushed Calabrian chili paste, and black pepper. Simmer on medium-low for about 5 minutes, stirring often.
  4. Remove the pan from heat, whisk in the grated Parmigiano Reggiano, then return to low heat, stirring constantly until smooth.
  5. Add kosher salt to boiling water and cook the trottoli pasta until al dente. Reserve a cup of pasta water.
  6. Drain pasta, add to the creamy sauce, and stir to coat. Thin the sauce with reserved pasta water as needed. Serve and enjoy!
