  • 3 scallions, finely sliced
  • 1 handful of cilantro leaves, chopped
  • 3 garlic cloves, crushed
  • 1 inch piece of ginger, grated
  • 2 tablespoons light soy sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon fish sauce
  • 1 tablespoon black vinegar
  • black pepper, sprinkle as desired
  • 1 tablespoon olive oil

  • 1/4 cup spicy gochujang aioli
  • 1/4 red or white cabbage, shredded
  • 1 tablespoon sesame seeds
  • 1 cucumber
  • 2 tablespoons rice vinegar
  • 1/2 teaspoon salt

Instructions

  1. In a large bowl, meld together the ground chicken, sliced scallions, chopped cilantro, crushed garlic, grated ginger, soy sauce, sesame oil, fish sauce, black vinegar, and a dash of black pepper. Mix well to create a flavorful and aromatic blend.
  2. Wet your hands to prevent sticking, then shape the mixture into large, thin burger patties, about 1/3 inch thick. Place them on a parchment-lined plate and refrigerate for 15-20 minutes to help them firm up while you prepare the toppings.
  3. In a mixing bowl, combine the shredded cabbage, sliced scallions, cilantro leaves, sesame seeds, rice vinegar, sesame oil, and fish sauce. Toss everything together well and set aside to let the flavors meld.
  4. Slice the cucumber into thin rounds and place it in a small bowl. Pour the rice vinegar over the slices and sprinkle with salt. Mix thoroughly and set aside for about 10 minutes to allow the flavors to develop.
  5. Heat a large frying pan over high heat and pour in the olive oil. Add the burger patties, cooking them for about five minutes per side until they are golden brown and have reached an internal temperature of 165°F (74°C). If your pan is small, cook in batches to prevent overcrowding.
  6. Slice the burger buns in half, and spread the spicy gochujang aioli across both sides. Layer on the sesame slaw, add a cooked burger patty, and top with pickled cucumber slices. Cap each burger with the top bun and serve hot.
