Ingredients

  • 1/4 cup Melted butter
  • 2 tablespoons Organic cane sugar
  • 1 cup Warm milk
  • 1 cup Sourdough starter
  • 1 teaspoon Sea salt
  • 3 cups Bread flour
  • Optional Add-ins
  • 1 tablespoon Active instant yeast
  • 1 large Egg white

Instructions

  1. In a medium bowl, combine the melted butter and organic cane sugar. Whisk until creamy and blended.
  2. Stir in the warm milk, then add the sourdough starter and instant yeast. Mix well.
  3. In a separate bowl, combine sea salt, bread flour, and any add-ins. Whisk together.
  4. Fold the wet mixture into the dry ingredients. Knead gently until a smooth, slightly tacky ball forms.
  5. Cover the bowl with a cloth and rest for 30 minutes.
  6. Stretch and fold the dough in the bowl, then let it rise for 1 hour.
  7. Perform the stretch and fold again and let it rest for another hour.
  8. Optionally, ferment overnight in the fridge.
  9. On a floured counter, stretch the dough into a rectangle and cut into 12 squares.
  10. Line a baking pan with parchment and sprinkle flour. Form rolls from squares.
  11. Let rolls rise for 1-2 hours at room temperature until doubled in size.
  12. Preheat oven to 400°F.
  13. Brush rolls with egg wash.
  14. Bake for 15 minutes, rotate, then bake for another 15 minutes.
  15. Optionally brush with melted butter after baking.
  16. Cool for 10 minutes before serving.
