Sourdough Croissants For Beginners: 1 Amazing Recipe

  • Author: Fatima Garcia
  • Total Time: 13-15 hours
  • Yield: 12 croissants 1x
  • Diet: Vegetarian

Description

Learn to make delicious sourdough croissants at home with this easy-to-follow recipe designed for beginners. Discover the unique tangy flavor and flaky texture that sourdough brings to this classic pastry.

Ingredients

Scale
  • 500g all-purpose flour
  • 250g water (room temperature)
  • 100g active sourdough starter
  • 10g salt
  • 50g sugar
  • 300g unsalted butter (cold)
  • 1 egg (for egg wash)

Instructions

  1. Make the Dough: In a large mixing bowl, combine the flour, water, sourdough starter, salt, and sugar. Mix until a shaggy dough forms.
  2. Knead the Dough: Transfer the dough to a floured surface and knead for about 10 minutes until smooth and elastic.
  3. First Rise: Place the dough in a lightly greased bowl, cover it with a damp cloth, and let it rise at room temperature for about 4-6 hours, or until doubled in size.
  4. Prepare the Butter Block: While the dough rises, place cold butter between two sheets of parchment paper and pound it into a rectangle about 1/2 inch thick. Chill it in the refrigerator.
  5. Incorporate Butter: Once the dough has risen, roll it out on a floured surface into a rectangle. Place the cold butter block in the center, and fold the dough over the butter to encase it.
  6. Laminate the Dough: Roll the dough into a long rectangle. Fold it into thirds (like a letter) and refrigerate for 1 hour. Repeat this rolling and folding process three times, allowing the dough to rest in the fridge between each fold.
  7. Cut the Croissants: Roll the dough into a large rectangle, about 1/4 inch thick. Cut triangles measuring 4 inches in base length. Starting from the wide end, roll each triangle toward the point, forming a crescent shape.
  8. Final Rise: Place the formed croissants on a lined baking sheet, ensuring some space between each. Cover them and let them rise at room temperature for 2-4 hours, or until puffy.
  9. Preheat the Oven: During the final rise, preheat the oven to 400°F (200°C).
  10. Egg Wash: Beat the egg and brush the mixture over the croissants for a beautiful golden-brown finish.
  11. Bake: Place the croissants in the preheated oven and bake for 20-25 minutes or until golden brown and flaky.
  12. Cool: Allow the croissants to cool slightly on a wire rack before serving.

Notes

  • Use quality ingredients for the best flavor and texture.
  • Work in a cool environment to keep the butter firm.
  • Use an oven thermometer for accurate temperature.
  • Do not rush the resting times for proper rising.
  • Experiment with flavor extracts for added taste.
