- 1 cup milk
- 2 large eggs
- 2 tablespoons melted butter (plus extra for cooking)
- 8 ounces smoked salmon
- ½ cup crème fraîche or sour cream
- Capers, for garnish (optional)
- Fresh dill, for garnish (optional)
- Lemon wedges, for serving (optional)
Instructions
- In a large bowl, combine the flour, baking powder, and salt. In another bowl, whisk together the milk and eggs. Gradually add the wet ingredients to the dry ingredients, mixing until smooth. Stir in the melted butter until just combined.
- Preheat a non-stick skillet or griddle over medium heat. Add a small amount of butter to coat the surface.
- Pour small dollops (about 2 tablespoons each) of batter onto the skillet. Cook until bubbles form on the surface, approximately 2-3 minutes, then flip and cook for an additional 1-2 minutes until golden brown.
- Continue this process until all batter is used up, adding more butter as needed between batches. Set the cooked blinis aside on a warm plate.
- Lay each cooked blini on a serving platter and top generously with crème fraîche.
- Place pieces of smoked salmon over the crème fraîche.
- Sprinkle with capers and fresh dill if desired for a flavor boost.
- Serve immediately with lemon wedges on the side for those who prefer a zesty kick.
